vegan tofu scramble
- 14 oz firm tofu, drained and pressed dry
- 3 tbsp vegan butter
- 1/2 tsp turmeric
- 2 tbsp salt free spice blend (like a ms. dash)
- 1 cup frozen/thawed chopped spinach
- 1 handful of vegan cheese (optional)
- 2 tsp maple syrup (optional)
- 1/2 cup chopped onion (optional)
- heat up non-stick skillet and add butter.
- put in tofu and use metal spatula to break up into bits as big or as small as you want.
- add in turmeric and spices.
- keep chopping and flipping tofu.
- add spinach.
- cook until tofu is cooked through.
- add optional ingredients and serve hot
- you can try it in a burrito too
