Hot & Sweet Asian-style Chicken
- 1 tbsp soy sauce
- 1 1/2 tsp tamari (or dark soy sauce)
- 1 1/2 tsp cornstarch
- 4 boneless, skinless chicken breasts, cut into cubes
- 1/2 cup ketchup
- 1/4 cup chicken stock
- 1 tbsp chili garlic sauce
- 2 tsp sugar
- 1 drizzle sesame oil
- 2 tsp minced ginger
- 2 tsp minced garlic
- 1 jalapeno, seeded and chopped tiny
- 1 tsp sesame seeds
- 1 heaping tsp cilantro flakes
- 1 feel free to add any veggies of your liking, I personally like it with just rice or noodles
- In a bowl, combine the soy, tamari and cornstarch.
- Whisk to blend.
- Add the chicken and coat well in the sauce.
- Let stand for 15 to 30 minutes.
- In a smaller bowl, combine the ketchup, chicken stock, chili garlic sauce and sugar.
- Mix well and set aside for later.
- Place a wok over high heat and drizzle sesame oil in it.
- Coat bottom of wok well.
- Add the ginger, garlic and jalapenos to the wok, stirring often (read, nonstop) for about 30 seconds.
- Add the chicken and stir-fry till the chicken is no longer pink, about 5 minutes.
- Add the sauce to the wok and bring to a boil.
- Toss well to make sure all the chicken is well coated.
- Sprinkle the sesame seeds and cilantro into the wok and toss to combine.
- Serve with a side of your choice, and enjoy :-)
