Mincemeat Fruit Cake Recipe

• 1 pound mincemeat (jar or possibly pkg.)
• 1 c. seedless raisins
• 1 c. minced nuts
• 1 c. sugar
• 1/2 c. shortening, melted
• 1 teaspoon vanilla
• 2 egg yolks
• 2 c. sifted flour
• 1 1/2 teaspoon baking pwdr
• 1/2 teaspoon soda
• 1 teaspoon salt
• 2 stiffly beaten egg whites (add in other spices if like)

1. Mix mincemeat, raisins, nuts, sugar, shortening, vanilla and egg yolks; beat thoroughly.
2. Add in sifted dry ingredients.
3. Mix in egg whites.
4. Bake in slow oven 80 min.
