Cauliflower Mash
- 1 head cauliflower
- 2 carrots
- 1 spoonfull of softened cream cheese
- 2 spoonfulls of plain yoghurt
- 1 tsp of butter
- 1 dash of salt, pepper and rosemary to taste
- Clean and chop the cauliflower and set aside
- Set a pot of water over medium high heat
- Once the water is boiling, carefully add your chopped cauliflower and cover the pot.
- Bring once again to a boil
- Then reduce heat to low and add the carrots.
- They should be peeled and roughly chopped.
- You can put more carrots if you want to
- Simmer for 10-15 minutes over low heat or until the cauliflower and carrots are mushy, not crunchy
- Once they are steamed, drain the water.
- Add the butter, yoghurt, cream cheese and seasoning
- Mash with a hand blender until smooth.
- It can be served warm or cold
