Tyler Texas Salad
- 4 summer squash
- 2 cups orange marmalade
- 1 cup shredded coconut
- 2 cups mandarin oranges
- 5 large carrots, shredded
- 2 cups crushed walnuts
- 1 cup olive oil
- 1 cup heavy whipping cream
- 1 cup orange juice
- 1 tablespoon rosemary
- 1 tablespoon cinnamon
- 2 tablespoons sugar
- 1 tablespoon salt
- 2 tablespoons poppy seeds
- 1 tablespoon black pepper
- 1 tablespoon paprika
- Slice squash into 1/4 inch"wheels," and toss together with marmelade, coconut, oranges, carrots, and walnuts.
- For the dressing, whip olive oil, cream, and orange juice together for 2-3 minutes.
- Mix all seasonings together in a small bowl and add to the dressing.
- Chill salad and dressing.
- Toss dressing with the salad right before serving.
- May garnish with more walnuts, if desired.
