Clouds low carb & diabetic
- 3 large eggs separated
- 45 grams Cream cheese I used mascapone
- 1/4 tsp cream of tartar
- 1 grams sweetner
- Line baking tray with greaseproof paper and put oven on 150 fan assisted
- Put yolks in 1 bowl and add cream cheese & sweetner then mix until smooth.
- I used electric whisk on low
- Put whites in another bowl and add cream of tartar and whisk on high until like meringue.
- Fold yolk mix into the white mix carefully so you don't break up fluffiness
- Put 6 to 10 big dollops onto baking tray in rounds and bake 30 minutes till golden brown and crispy.
- Cool few minutes then transfer to wire rack to cool completely.
- If you want them more soft and bread like put into plastic lidded container or zip lock bag and put in fridge overnight to transform
- Butter the flat side and put 2 together for sandwiches
- Enjoy
