Baby Beets Glazed With Orange, Vanilla And Cardamom Recipe
- 2 x - 3 lbs baby beets, cooked and sliced
- 3/4 c. fresh orange juice zest of 1 orange
- 1 Tbsp. cornstarch
- 4 x " vanilla bean, cut in half (or possibly 1 tsp pure vanilla extract) healthy pinch of cardamom salt and white pepper to taste
- Place 1/2 c. orange juice, orange zest and vanilla bean pcs in a small saucepan and bring to a boil.
- Remove from heat and set aside.
- Prepare beets.
- Reheat orange-vanilla mix.
- Dissolve cornstarch in remaining 1/4 c. orange juice.
- Add in to orange-vanilla mix, stirring constantly.
- Cook till thickened and clear.
- Add in cardamom, salt and pepper.
- (Add in vanilla extract if not using vanilla bean.)
- Remove pcs of vanilla bean, scraping seeds into mix.
- If glaze is too thick, add in more orange juice to thin it.
- Pour over beets, glazing beets thoroughly.
- Reheat, if necessary, before serving.
