Cut Okra with Sauteed Baby Pear Tomatoes (Tamatar Vali Cutti Hui Bhindi) Recipe

  1. Wash and wipe dry each okra.
  2. Cut off stems and slice into A 1/2-in pieces.
  3. Discard tips if too brown.
  4. Heat 3 T oil in large nonstick skillet over mod-high heat and cook okra, stirring occasionally, until it starts to turn golden 5-7 mins.
  5. Stir in onion and continue to cook, stirring occasionally until onion turns brown, 5-7 mins.
  6. Add spices and salt, reduce heat to low, cook until okra turns brown and crisp, 5-7 mins.
  7. Transfer to serving dish and keep warm.
  8. Heat remaining oil in same skillet over medium heat then cook tomatoes until lightly glazed with spices remaining in pan, 3-4 mins.
  9. Shake skillet a few times to stir.
  10. Top the tomatoes with chopped cilantro and transfer them to okra dish.
  11. Serve hot as a side dish.
