Taco Pasta Bake
- 16 ounces, weight Dried Pasta
- 1 pound Ground Beef
- 1 whole Onion, Diced
- 1 whole Bell Pepper, Stem And Seeds Removed, Then Diced
- 8 ounces, weight Room Temperature Cream Cheese
- 8 ounces, weight Shredded Pepper Jack Cheese
- 1 cup Sour Cream
- 12 ounces, weight Salsa
- 12 ounces, weight Canned Black Beans, Drained And Rinsed
- 2 Tablespoons Taco Seasoning
- 1 cup Crushed Tortillia Chips
- 1 cup Diced Fresh Tomatoes
- Chopped Scallions And Fresh Cilantro, For Garnish (optional)
- Boil pasta according to package directions.
- When done, drain it and set aside.
- Into a large frying pan over medium heat, add in your ground meat, diced peppers and onions.
- Fry until beef is cooked through.
- Make sure to break it up into small pieces with your spatula.
- Over low heat toss cooked pasta in with your meat and vegetables, and add the cream cheese and shredded cheese.
- Mix until cheese is all mixed in (the cream cheese should melt right in and coat pasta).
- Add in sour cream, salsa, beans and taco seasoning.
- Remove from heat.
- Pour into a 1-1.5 quart baking dish and top with tortilla chips and diced tomatoes.
- Bake at 350 F for 30 minutes.
- Garnish with sliced scallions or fresh cilantro.
