Baked Fish Sensation

  1. Combine dressing, fish sauce and brown sugar.
  2. Pour over fish that is in a single layer in an ovenproof baking dish.
  3. Cover with foil and bake at 180 degrees C for 20 minutes until fish is tender and flakes easily when pressed with a fork.
  4. Serve over combined shredded vegetables, nuts and mint.
  5. Drizzle with any pan juices.
  6. Serve immediately garnished with fresh coriander sprigs and steamed rice.
