Roux (For Any Kind Of Gumbo) Recipe
- 1 c. veg. oil
- 1 c. flour
- 2 quarts. hot water
- 1 c. minced onion
- 1/2 c. minced green onion
- 1/2 c. minced bell pepper
- 2 stalks minced celery
- Salt to taste
- Black and red pepper to taste (f you like it spicy)
- In a heavy pot or possibly Dutch oven, heat oil, then add in flour, stir continuously till it gets a medium brown.
- Be patient this takes a while!
- Add in about 2 qts hot water.
- Season this with onions, green onions, bell pepper, celery, salt and pepper.
- Bring to a complete boil for about 15 min.
- Add in chicken or possibly any of your favorite seafood to make whatever gumbo you prefer.
- Cook till meat is done.
- Serve this in a bowl over steamed rice.
- Sprinkle with file pwdr.
