Roux (For Any Kind Of Gumbo) Recipe

  1. In a heavy pot or possibly Dutch oven, heat oil, then add in flour, stir continuously till it gets a medium brown.
  2. Be patient this takes a while!
  3. Add in about 2 qts hot water.
  4. Season this with onions, green onions, bell pepper, celery, salt and pepper.
  5. Bring to a complete boil for about 15 min.
  6. Add in chicken or possibly any of your favorite seafood to make whatever gumbo you prefer.
  7. Cook till meat is done.
  8. Serve this in a bowl over steamed rice.
  9. Sprinkle with file pwdr.
