Beef Tamale Hotdish Recipe
- 1 pound grnd beef
- 1 tbsp. shortening
- 1 lg. onion
- 1 clove garlic
- 1 med. can tamales
- 1 med. can creamed corn
- 1 (8 ounce.) can tomato sauce
- 1 (4 ounce.) can mushrooms
- 2 teaspoon salt
- 1/2 teaspoon pepper
- Cayenne pepper to taste
- 1/2 c. pitted ripe olives
- 1/4 c. grated Cheddar cheese
- Brown grnd beef, shortening, onion and garlic till crumbly.
- Drain off fat.
- Cut tamales into 1 inch pcs.
- Add in tamale pcs, corn, tomato sauce, mushrooms, salt and pepper to beef mix.
- Season with cayenne pepper to taste.
- Bake in 2 1/2 qt casserole at 350 degrees for 1 hour.
- Top with olives and cheese; return to oven for 10 min.
