Fried Cabbage (Done My Way...)
- 1 medium head cabbage, coarsely shredded
- 2 -3 slices smoked bacon, diced
- 1 medium onion, chopped
- 14 lb butter, divide in half (NOT margerine)
- 12 teaspoon salt
- 1 teaspoon caraway seed (optional)
- 12 teaspoon marjoram leaves (optional)
- 1 -2 tablespoon light brown sugar (optional)
- Remove outer leaves of cabbage & cut off the end of core.
- Coarsely shred the cabbage, including the core (the core's the best part) & set aside.
- Melt half the butter in a large skillet (cast iron works best).
- Add the onion & bacon -- cook, stirring occasionaly.
- until onion is soft & bacon is lighly browned.
- Remove from skillet & set aside.
- Melt the rest of the butter & add the shredded cabbage.
- Cover & cook until cabbage is somewhat limp & lightly browned, stirring occasionaly -- about 15-20 minutes.
- When cabbage is done, add the salt & any or all of the other listed seasonings -- cover & cook another 10 minutes.
