Matzo Meal Pancakes
- 1/2 cup matzo meal
- 1 Tbsp. sugar
- 3/4 tsp. salt
- 3/4 cup water
- 2 Tbsp. margarine, melted
- 3 eggs, separated
- MIX matzo meal, sugar and salt.
- Stir in margarine and water.
- BEAT egg yolks lightly.
- Add to matzo mixture; let stand 10 minutes.
- Beat egg whites until stiff peaks form.
- Fold into matzo mixture.
- POUR about 1/4 cup batter onto hot lightly greased griddle.
- Cook until browned on both sides.
- Serve with pure maple syrup or fruit preserves.
- Makes 2 to 3 servings.
