Matzo Meal Pancakes

  1. MIX matzo meal, sugar and salt.
  2. Stir in margarine and water.
  3. BEAT egg yolks lightly.
  4. Add to matzo mixture; let stand 10 minutes.
  5. Beat egg whites until stiff peaks form.
  6. Fold into matzo mixture.
  7. POUR about 1/4 cup batter onto hot lightly greased griddle.
  8. Cook until browned on both sides.
  9. Serve with pure maple syrup or fruit preserves.
  10. Makes 2 to 3 servings.
