Savory Green-Onion Pancakes

  1. Stir together 2 lightly beaten large eggs and 1 cup all-purpose flour in medium bowl until combined.
  2. Fold in summer squash, green onions, and 1/2 teaspoon each salt and pepper.
  3. Heat 2 tablespoons oil in 10-inch nonstick skillet on medium 1 minute.
  4. Spread half of batter to evenly cover bottom of skillet.
  5. Cook 7 to 8 minutes or until golden brown and crisp, turning over once.
  6. Repeat with remaining batter.
  7. Serve with lime wedges.
