Whipped Sweet Potatoes With Vanilla Yogurt and Crunchy Granola T

  1. Wash sweet potatoes and place in oven on bottom rack.
  2. Bake potatoes at 350 F for approximately 40 to 60 minutes, until they are soft to the touch.
  3. Remove potatoes from oven and allow to cool before removing the skin.
  4. Place warm sweet potato flesh in a mixing bowl.
  5. Add Weight Watchers Vanilla Nonfat Yogurt, pumpkin pie spice and salt.
  6. Whip using wire whip attachment on medium speed for about a minute.
  7. Scrape sides down and whip on high for about 30 seconds or until all of the yogurt is mixed into the potatoes.
  8. Cover glass or ceramic baking dish (1 1/2 to 2 quart) with cooking spray.
  9. Scoop potato mixture into the prepared baking dish.
  10. Sprinkle granola evenly across the top of the potatoes and lightly spray with cooking spray.
  11. Bake at 350 F for approximately 40 to 50 minutes (granola will brown slightly).
  12. Remove the pan from oven and serve.
