Mum's Baked Reuben

  1. shred or cut up corned beef.
  2. slice cheese.
  3. In a large mixer bowl, combine flour, yeast, onion, caraway seed, and salt; mix well.
  4. Add very warm water (120 to 130 degrees) molasses and oil to flour mixture.
  5. Blend at low speed until moistened; beat 3 minutes at medium speed.
  6. By hand, gradually stir in rye flour to make a stiff batter.
  7. Spread batter in greased 9-inch square cake pan.
  8. Combine mayonnaise and mustard; spread over dough.
  9. Cover; let rise in warm place until almost doubled, about l5 minutes.
  10. Sprinkle corned beef over dough,
  11. then sprinkle sauerkraut over beef.
  12. Place cheese slices on top, overlapping edges.
  13. Bake at 375 for 30 to 35 minutes til cheese is melted.
  14. Serve hot.
  15. Makes 4-6 servings.
  16. (Remove any remaining servings from pan, wrap in foil and refrigerate.
  17. Reheat at 300 for about l5 minutes.
