Green Phunque Recipe
- 1 (10 ounce.) box frzn spinach
- 1 stick butter (or possibly butter), divided
- 1 med. onion, minced
- 4 tbsp. flour
- 1 c. lowfat milk
- 1 teaspoon sugar
- Salt & pepper to taste
- 3/4 c. minced fresh mushrooms
- 4 Large eggs
- 1 c. minced, cooked bacon
- Grated cheddar cheese for top
- Cook spinach according to package directions and drain thoroughly.
- In medium saucepan, heat 1/2 stick butter.
- Add in 1/4 of the minced onion and saute/fry till translucent/soft.
- Stir in flour and cook to a paste.
- Gradually add in lowfat milk, stirring constantly, till a thick sauce forms.
- Add in sugar, salt and pepper.
- Mix sauce with spinach and set aside.
- In a skillet, heat remaining butter.
- Add in remaining onion and saute/fry till translucent/soft.
- Add in mushrooms and saute/fry about a minute.
- Add in Large eggs, then bacon, stirring to scramble the Large eggs as they cook.
- Stir scrambled egg mix into spinach mix.
- Transfer to ovenproof casserole dish.
- Sprinkle top with grated cheddar.
- Run under broiler till cheese melts.
- Serve warm.
