Basil-Parmesan Chicken and Pasta
- 3 whole Chicken Breasts Cut Into Pieces
- 1 teaspoon Garlic, Minced
- 1/2 cups Basil-Parmesan Pesto
- 2 Tablespoons Lemon Juice
- 2 Tablespoons Water
- 4 Tablespoons Dry White Wine
- 5 teaspoons Dried Basil
- 2- 1/2 cups Tortellini
- 14 ounces, weight Frozen Broccoli Florets
- Cook pasta and broccoli together, according to directions on the package of pasta.
- Drain.
- Heat a large nonstick skillet over medium-high heat.
- Spray with cooking spray and cook chicken and garlic for about 2 minutes, or until browned on sides.
- Then, pour remaining ingredients in the skillet, stirring to mix.
- Reduce heat and simmer, covered, for 6-8 minutes or until chicken is done.
- To serve, combine pasta, broccoli, and chicken mixture.
- Serves 6.
