Turkey Breast- Orange Blackberry Relish
- 1 medium oranges seeded & coarsely chopped
- 13 cup orange juice, concentrated plus 2 tablespoons, thawed, undiluted, divided
- 1/4 cup brown sugar firmly packed
- 2 tablespoons cornstarch
- 16 ounces blackberries frozen, unsweetened, thawed, drained
- 1/4 cup water
- 6 pounds turkey breast skinned
- 12 leaves lettuce leafy
- 2 medium oranges cut into 1/4 inch slices
- 2 1/2 tablespoons sweet relish
- With knife blade in processor, add chopped orange.
- Process 1 1/2 minute or until finely chopped.
- Place chopped orange in a medium non- aluminum saucepan.
- Add 2 teaspoons orange juice concentrate, brown sugar, cornstarch and thawed blackberries; stirring gently.
- Place over medium-low heat and cook 7 minutes or until mixture thickens, stirring constantly.
- Place in a medium bowl; cover and chill.
- Combine remaining 13 cup orange juice concentrate and 1/4 cup water.
- Set aside.
- Place turkey breast on a rack covered with cooking spray and place rack in a shallow rosting pan.
- Insert meat thermometer into meaty portion, making sure it does not touch the bone.
- Baste turkey breast with orange juice mixture.
- Cover and bake at 325F for about 1 hour.
- Uncover and bake turkey breast an additional hour or until meat thermometer registers 170F, basting frequently with orange juice mixture.
- Place turkey brest on a lettuce lined serving platter; cover loosely with foil and let stand about 15 minutes before slicing.
- Arrange orange slices around turkey slices and serve relish with turkey.
