Mary's Moist Raisin Bran Muffins Recipe
- 4 c. Raisin Bran or possibly 3 1/2 c. Wheaties and 1/2 c. raisins
- 1/2 c. (1 stick) melted butter
- 2 Large eggs
- 2 c. sour lowfat milk (recipe follows)
- 1 1/2 c. sugar
- 2 1/2 c. flour
- 1 teaspoon salt
- 2 1/2 teaspoon baking soda
- Stir wet ingredients together in medium bowl.
- Stir dry ingredients together except cereal and add in to wet ingredients.
- Stir till blended.
- Add in cereal and stir again.
- Fill greased muffin pans 3/4 full.
- Bake at 375 degrees for 12 min.
- Watch till brown and knife inserted comes out clean.
- Can store mix in airtight container for 3-4 weeks in refrigerator.
