Pepperoni Chicken Parmesan

  1. Preheat oven to 425 degrees F. Set a cooling rack over a baking sheet, lightly coat with nonstick spray.
  2. Set up your dredging station: one bowl with breadcrumbs and Italian seasoning mixed in, and another bowl with the beaten egg.
  3. Begin by lightly pounding the chicken breasts to an even thickness so they cook evenly.
  4. Lightly season chicken with salt and pepper.
  5. First dip chicken in egg, then breadcrumbs.
  6. Feel free to dip back into the egg and breadcrumbs for a thicker crust.
  7. Set on cooling rack.
  8. Repeat with all chicken breasts.
  9. Bake chicken for 1520 minutes, or until cooked through.
  10. Cooking time will depend on the thickness of the chicken so keep an eye on it!
  11. Once chicken is cooked, remove from oven and layer the sauce, pepperoni and mozzarella on top.
  12. Turn the broiler on and put the chicken back in the oven to melt the cheese.
  13. This should only take about 2 minutes.
  14. Serve with a simple vegetablewe did roasted Brussels sprouts.
  15. Enjoy!
