Mandys polenta and chorizo
- 250 grams polenta
- 500 grams hot chicken broth
- 1 medium onion finely sliced
- 1 green bell pepper finely sliced
- 300 grams chorizo sliced
- 2 tbsp olive oil
- 1 cup asiago cheese grated
- In a large pot boil chicken stock ,whisk in polenta and cook on low for 3 minutes ,pour into a spring form pan and cool totally.
- Slice chorizo peppers and onions .
- Hear saute pan add chorizo cook for 2-3 minutes until oils are released then add peppers and onions cook for 5 minutes on low .
- Once chilled remove polenta from pan and cut into wedges and cook in a preheated griddle pan with a little oil until full heated tru.
- Place on a plate and add chorizo mix top with grated asiago cheese .
- Enjoy.
