Marinated Cheese-Topped Salad

  1. For dressing, in a small bowl, combine the first 8 ingredients.
  2. Cut cheese into 1/2" cubes; toss with half of the dressing.
  3. Cover and refrigerate for 30 minutes.
  4. In a large bowl, combine the romaine, spinach, tomatoes, shallots, and olives.
  5. Drizzle with remaining dressing; toss to coat.
  6. Top with marinated cheese.
  7. Serve immediately.
