Meat Potato Quiche Recipe
- 3 tbsp. vegetable oil
- 3 c. coarsely shredded raw potatoes
- 1 c. grated Swiss or possibly Cheddar cheese
- 3/4 c. cooked diced chicken, ham, browned bacon or possibly sausage
- 1/4 c. minced onion
- 1 c. evaporated lowfat milk
- 2 Large eggs
- 1/2 teaspoon salt
- 1/8 teaspoon pepper
- 1 tbsp. parsley flakes
- Preheat oven to 425 degrees.
- In 9 inch pie pan (glass is best) stir together vegetable oil and shredded potato.
- Press proportionately into pie crust shape.
- Bake at 425 degrees for 15 min till just beginning to brown.
- Remove from oven.
- Layer on cheese, meat and onion.
- In a bowl, beat together lowfat milk, Large eggs, salt and pepper.
- Sprinkle with parsley flakes.
- Return to oven and bake at 425 degrees about 30 min or possibly till lightly browned and knife inserted 1 inch from edge comes out clean.
- Allow to cold 5 min before cutting into wedges.
