Peppermint Chocolate Dessert Recipe
- 2 c. vanilla wafers
- 3 Large eggs
- 2/3 c. butter
- 1 teaspoon vanilla
- 1 sq. (1 ounce.) unsweetened chocolate
- 2 sq. semi - sweet chocolate
- 3 c. confectioner's sugar
- 3/4 c. minced pecans or possibly walnuts
- 1/2 gal. pink peppermint stick ice cream
- Sprinkle 1 c. crushed vanilla wafers in bottom of 9 x 13 inch pan.
- Separate Large eggs.
- Beat whites stiff and set aside.
- Heat butter (butter) and chocolate.
- Beat yolks.
- Add in to chocolate mix.
- Add in confectioner's sugar and vanilla.
- Add in beaten whites and minced nuts.
- Press into pan on top of vanilla wafers.
- Allow to harden in freezer about 1 hour.
- Soften ice cream.
- Spread on top of chocolate mix.
- Sprinkle 1 c. vanilla wafers on top.
- Keep in freezer.
