Hill Country Peach Cobbler

  1. Filling: In a large bowl, combine sugar and cornstarch.
  2. Add peaches and toss to coat, stir in extract and butter; set aside.
  3. Crust: Combine flour, sugar and salt in a mixing bowl.
  4. Cut shortening into flour mixture until it is the consistency of cornmeal.
  5. Gradually add ice water until dough olds its shape.
  6. Roll out dough 1/4-inch thick on floured board; cut into 1-inch wide strips.
  7. Pour filling into a buttered 13x9x2-inch baking dish.
  8. Criss-cross dough strips over filling.
  9. Brush pastry with melted butter and sprinkle with sugar.
  10. Bake in 400F oven 30 minutes, or until crust is golden brown.
