Granny's Chicken Okra Gumbo with Sausage

  1. Brown chicken pieces in some of the oil; remove from pot.
  2. Brown okra and remove from pot.
  3. Add remainder of oil and flour, stirring constantly untill roux is a rich brown.
  4. Add okra and water to roux, blending well.
  5. Add chicken, sausage, gizzards, and remaining ingredients except file'.
  6. Salt and pepper to taste.
  7. Cook for 1 1/2 to 2 hrs.
  8. Stir in file' during the last 1/2 hr.
  9. of cooking.
  10. Serve with hot cooked rice in soup bowls.
