Raspberry Pecan Squares
- 1 cup butter, soft
- 13 cup sugar
- 2 egg yolks, beaten
- 2 cups flour
- 1 cup raspberry jam
- 4 tablespoons icing sugar
- 12 cup pecans, toasted and chopped
- Preheat oven to 375*.
- Lightly grease an 8" square pan.
- Cream butter and sugar.
- Beat in egg yolks.
- Stir in flour 1/2 cup at a time.
- Press 1/2 the dough into the prepared pan.
- Spread jam and top with remaining dough.
- Sprinkle with icing sugar and pecans.
- Bake for 35 minutes.
- Allow to cool completely before cutting.
- If desired, you can lightly dust again with icing sugar before serving.
