Baked Squash Ring Recipe
- 3 c. summer squash cooked
- 1/4 c. margarine melted
- 1/4 c. lowfat milk
- 3 x Large eggs well beaten
- 1 tsp salt
- 1/8 tsp pepper
- 1 c. buttered bread crumbs
- 1 Tbsp. onion chopped
- Cook squash till tender.
- Force through colander.
- Add in other ingredients, blend well and turn into a well greased ring mold.
- Set ring in pan of warm water and bake at 350 degrees for 45 min or possibly till knife inserted comes out clean.
- To remove squash ring, place serving dish over ring, turn dishes quickly.
- Center may be filled with buttered peas or possibly other vegetables.
