Grapefruit & Pineapple Shrimp Skewers
- 1/2 pounds Raw Shrimp, Deveined, Shell On
- 2 whole Grapefruits, Divided
- 1 whole Lemon, Zest And Juice
- 1 whole Lime, Zest And Juice
- 1 teaspoon Cumin
- 1/2 teaspoons Cayenne Powder
- 1 teaspoon Sea Salt
- 1 dash Black Pepper
- 1 bunch Cilantro
- 1/2 whole Pineapple
- 1.
- Place the shrimp (with shell on) in a bowl and add juice of one grapefruit, juice and zest of lime, juice and zest of lemon, cumin, cayenne, salt, and black pepper.

- Cut up the other grapefruit into big chunks and the finely chop up the cilantro and add to the bowl.
- 3.
- Stir to distribute and let marinate 30 minutes 1 hour.
- 4.
- While you are waiting, cut up the pineapple into chunks.
- 5.
- Heat the grill medium-hot.
- Skewer the pineapple, shrimp, and grapefruit and place onto the grill.
- Cook about 10 minutes on each side.
- The shrimp shells should get a little black on the edges and the fruit will get nice and brown on the edges.
- 6.
- Remove from skewers and serve.
- Leave the shrimp peeling to your guests if you are a lazy host like me!
- Serve with Mango Dipping Sauce (see my recipe box).
