Cajun Pork Chops with Crockpot Lentils and Lemon Green Beans
- 1 pound Lentils, Rinsed
- 4 cups Chicken Stock
- 2 cloves Garlic, Minced Or Grated
- 1 teaspoon Italian Seasoning
- 1/2 cups Cajun Seasoning {Recipe Below}
- 4 whole Pork Chops (bone Out)
- 4 Tablespoons Olive Oil, Divided
- 1 pound Green Beans, Washed And Ends Removed
- 1 cup Grape Tomatoes, Halved
- 2 Tablespoons Lemon Juice
- Salt And Pepper, to taste
- 3 Tablespoons Smoked Paprika
- 1 Tablespoon Cayenne Pepper
- 2 Tablespoons Kosher Salt
- 2 Tablespoons Garlic Powder
- 1 Tablespoon Onion Powder
- 1 Tablespoon Dried Oregano
- 1 Tablespoon Dried Basil
- 1 teaspoon Dried Thyme
- 1 teaspoon Black Pepper
- For the Cajun seasoning mix: Mix all ingredients together.
- Use throughout the recipe when called for.
- Store the rest in an airtight container for up to 6 months.
- For the lentils: Add the lentils, chicken stock, garlic, and Italian seasoning into your crockpot.
- Put the lid on and cook on high for 3 hours or until lentils are tender.
- Season with salt and pepper.
- For the pork chops: Preheat your oven to 375 F.
- In a shallow dish add about 1/4 cup of the Cajun spice mix.
- Dredge both sides of the pork chops in the Cajun spice mix.
- Heat 2 tablespoons of olive oil in a skillet over medium high heat.
- Cook pork chops 2 minutes per side then transfer to a baking dish and cook 10 minutes in the oven at 375 F. Remove dish from the oven and tent with foil.
- Set aside.
- In a separate pan heat 2 tablespoons of oil and heat over medium heat.
- Add the green beans and tomatoes to the pan cook for two minutes until green beans are slightly tender.
- I like my green beans with crunch but you can cook them longer for more tenderness.
- Add the lemon juice to the pan and toss it with the green bean mixture.
- Season with salt and pepper.
- Serve green beans and pork chops on top of a bed of lentils.
