Turkey Meatballs and Spaghetti Squash Recipe kassiesly
- 1 large spaghetti squash
- 1 lb ground turkey
- 4 cloves garlic
- 2 stems green onion
- 2 cups spinach
- 1/2 cup panko
- 1 egg
- 1 jar favorite spaghetti squash
- 1 pinch pepper and parsley
- 1/2 cup parmesan (seperated)
- Preheat oven to 400 degrees.
- Pierce Spaghetti Squash evenly in about 12 places.
- Place in microwave for about 15 minutes.
- I normally roll mine over half way through, just to make sure it heats evenly.
- Take out of microwave and let rest while you work on the meatballs.
- Place thawed ground turkey, egg, panko, chopped green onion, smashed/chopped garlic, and chopped spinach, parmesan, and seasonings into a bowl and mix well.
- If it is still runny, add a little more panko.
- Form turkey mix into 1.5 inch balls and place evenly on a baking dish.
- Place in oven cook for about 15-20 minutes turning them over once.
- While meatballs are cooking cut squash in half long ways.
- (IT BE !)
- Remove seeds, and shred with fork long ways so it forms spaghetti like strands.
- Place in pan and top with remaining parmesan.
- I normally have a little green onion left too and I just put on top.
- Warm up spaghetti sauce and put meatballs in and serve!!
