Baked Lima Beans
- 2 lb. bag Seaside 4 hook dried lima beans
- 1 Tbsp. salt
- 2 1/2 c. water
- cold water
- 1 tsp. salt and pepper
- 1 tsp. dried onions
- 1 c. ketchup
- 1/2 c. turkey brand, dark Karo
- 2 Tbsp. brown sugar
- 1/2 Tbsp. dried mustard or 1 Tbsp. regular mustard
- pork chops
- strips of bacon
- about 6 drops hot sauce (optional)
- Soak beans and 1 tablespoon salt in 2 1/2 cups water in an 8-quart pan overnight.
- Cook beans next day for about 2 hours. Cover with cold water.
- Add 1 teaspoon salt and pepper and dried onions.
- Put in pan.
- Bake at 350u0b0 for about 2 hours.
- Mix ketchup, Karo, brown sugar and mustard.
- Pour this over beans when baking. Put pork chops and strips of bacon on top.
- If you want you can use hot sauce with mixture.
