fried banana snowballs * christmas winter *
- 1 packages red velvet pancake mix (14 oz.)
- 1 veggie oil ( enough for deep frying)
- 1/2 packages powdered sugar
- 1 the ingredients stated on pancake mix pkg.
- 1/2 cup flour
- 1 tsp baking soda
- 5 very slightly green bananas. (peeled)
- heat oil in medium\mall pot
- slice bananas to desired thickness..
- I prefer about 1/2 in... set aside
- pour pancake mix in medium bowl.
- add flour and baking soda.
- sift together.
- add ingredients according to pkg.
- directions.
- in my case it was just add water) (which seems to work best)
- dunk banana slices into batter one at a time.
- drop 4 at a time into hot oil and fry until lightly browned and is crispy.
- remove from oil and drain and cool on wire racks.
- (place wax paper underneath cuz it may get messy)
- in a seperate bowl pour in powdered sugar.
- remove any "tails" of fried dough from ur banana balls.. ( do not discard.. they make great crumbles for on top of icecream!)
- when completely cool roll the fried banana balls into the powdered sugar.
- coat completely!
- so they look like snowballs.
- assemble on a plate and serve..
- tip: when dropping into hot oil they do sink to the bottom and may stick... affter a few seconds just gently scrape them off and then they will float.
- fry for only a few seconds more.
- do not over fry or they will burn.
- makes a great snack, dessert or party pleaser!
