Indian Split Pea Soup
- 2 cups yellow split peas
- 8 cups water or 8 cups stock
- 2 tablespoons sunflower oil
- 1 cup diced onion
- 1 12 tablespoons minced garlic
- 1 tablespoon minced fresh ginger
- 1 12 cups chopped kale
- 12 teaspoon ground cumin
- 14 teaspoon ground coriander
- 12 teaspoon turmeric
- 18 teaspoon cayenne pepper
- 1 teaspoon salt
- Wash peas.
- Add water or stock in a soup pot.
- Bring to a boil and cook on low heat for 45 minutes, half covered with lid, stirring occasionally.
- Heat the oil in a fry pan and saute the onions, garlic and ginger until lightly browned and tender.
- Add to split peas along with all of the remaining ingredients.
- Lower heat and simmer, cover and continue to cook 30 minutes longer, stirring occasionally.
