Moms Meatball Meal
- 2 whole Egg Whites
- 1 cup Bread Crumbs, Plain
- 1/2 cups Onion, Chopped Fine
- 1/2 teaspoons Garlic Powder
- 1/4 teaspoons Pepper
- 1 pound Ground Beef Or Turkey
- 2 cups Bowtie Pasta
- 3 cups Spaghetti Sauce
- 2 cups Mushrooms, Sliced
- 3 cups Fresh Spinach
- 8 ounces, weight Cheese For Melting (mozzarella, Monterey Jack, Etc.)
- 1.
- In a medium bowl, combine the egg whites, bread crumbs, onion, garlic powder, pepper, and ground meat.
- Mix well and form into small meatballs.
- Brown meatballs in a lightly greased skillet over medium heat until cooked through.
- Meanwhile, prepare pasta according to package directions.

- Add spaghetti sauce, mushrooms, and spinach (you can use a box of frozen chopped spinach, thawed and well-drained, if desired) to the meatballs.
- Add water if necessary and saute until mushrooms are soft and spinach is wilted.
- Season to taste with salt and pepper.

- Drain pasta and add to the meatball mixture.
- Add cheese.
- Cover.
- Turn heat to low and allow cheese to melt.
- Stir and serve.
