Vickys Sweet Waffles, Dairy, Egg & Soy-Free
- 125 grams plain flour
- 2 tbsp caster sugar
- 2 tsp baking powder
- 1/2 tsp salt
- 1/2 tsp mixed spice or cinnamon
- 240 ml full fat coconut milk (canned)
- 1 tbsp vegetable oil
- 1 tsp vanilla essence
- 1 oil spray for waffle iron
- Preheat your waffle iron and spray with oil
- Mix all the dry ingredients together in a bowl
- Put the milk into a jug with the oil and vanilla.
- Add to the dry mix slowly, stirring so no lumps remain but don't over mix
- Pour into waffle iron and cook until golden, 5 - 7 minutes is my preferred time
- Serve with cashew cream (see my profile for recipe), maple syrup and fruit salad!
- Yields 8 waffles, 2 per person
