Broccoli, Carrot, Tofu Stir Fry
- 2 heads / broccoli
- 4 carrots
- 1 pkg. tofu
- 4 cloves garlic
- 1 onion
- 1 sm. portion of ginger
- Get rice started in rice cooker.
- 2:1 ratio water to rice.
- (2 cups water to 1 cup rice) Dice Onion, Garlic, Ginger and saute in olive oil - substitute hot chili oil for more flavor.
- Once the onion combination begins to become translucent, add in Carrots, Broccoli, and Tofu (cubed) and stir / toss for 10-15 minutes.
