Johnny b-good southern clams
- 60 small clams in shell
- 2 tbsp olive oil, extra virgin
- 6 clove garlic, minced
- 1 cup white wine
- 2 tbsp butter
- 3 1/3 cup coconut milk (2 cans)
- 1/2 cup chopped fresh parsley
- Wash clams remove any dirt or sand
- In a large pot, heat oil over medium heat.
- Add garlic, saute until tender about 1 minute.
- Pour in white wine.
- Boil until wine has reduced to half its original volume.
- Add clams, cover, and steam until clams start to open.
- Add butter, cover, and cook until most or all of the clams are open.
- Pour in the coconut milk, cover, and cook for 3-5 minutes.
- Turn stove off and let stand an additional 3-5 minutes.
- Transfer clams and sauce to large pan or 2 bowls.
- Sprinkle with parsley.
- Serve
