Johnny b-good southern clams

  1. Wash clams remove any dirt or sand
  2. In a large pot, heat oil over medium heat.
  3. Add garlic, saute until tender about 1 minute.
  4. Pour in white wine.
  5. Boil until wine has reduced to half its original volume.
  6. Add clams, cover, and steam until clams start to open.
  7. Add butter, cover, and cook until most or all of the clams are open.
  8. Pour in the coconut milk, cover, and cook for 3-5 minutes.
  9. Turn stove off and let stand an additional 3-5 minutes.
  10. Transfer clams and sauce to large pan or 2 bowls.
  11. Sprinkle with parsley.
  12. Serve
