Mixed Bean Soup
- 13 cup pinto beans
- 13 cup great northern beans
- 13 cup red beans
- 18 cup red kidney beans
- 18 cup white beans
- 1 tablespoon black beans
- 1/4 cup chickpeas (garbanzo beans)
- 1 tablespoon black-eyed peas
- 2 tablespoons split peas
- 13 cup lentils
- Place in large pan, cover with water, soak, rinse well, then add 2 quarts water and meat if you want.
- Simmer slowly 2 1/2 hours.
- Add vegetables.
- Simmer another hour or until done.
- Before serving, add 1/2 cup red wine; 1/2 cup chopped parsley.
