Mixed Bean Soup

  1. Place in large pan, cover with water, soak, rinse well, then add 2 quarts water and meat if you want.
  2. Simmer slowly 2 1/2 hours.
  3. Add vegetables.
  4. Simmer another hour or until done.
  5. Before serving, add 1/2 cup red wine; 1/2 cup chopped parsley.
