Cornmeal-Crusted Tilapia

  1. Heat olive oil in a medium skillet over medium heat.
  2. On a shallow plate, combine cornmeal, salt, pepper, parsley, and lemon zest.
  3. Dredge tilapia fillets in the cornmeal mixture.
  4. Cook fillets in the hot oil, 2 at a time, about 3 minutes on the first side and 1-2 minutes on the second side.
  5. Remove the cooked fillets to a paper towel lined plate.
  6. (Add additional olive oil to the pan if necessary when you cook the remaining 2 fillets).
  7. Slice the lemon into wedges and serve with tilapia.
