Cornmeal-Crusted Tilapia
- 2 Tablespoons Olive Oil, Plus More If Necessary
- 4 whole Tilapia Fillets
- 1/2 cups Cornmeal
- 1/2 teaspoons Salt
- 1/2 teaspoons Pepper
- 2 Tablespoons Fresh Parsley, Minced
- 1 whole Lemon, Zested (reserve The Remaining Lemon To Slice Into Wedges For Serving)
- Heat olive oil in a medium skillet over medium heat.
- On a shallow plate, combine cornmeal, salt, pepper, parsley, and lemon zest.
- Dredge tilapia fillets in the cornmeal mixture.
- Cook fillets in the hot oil, 2 at a time, about 3 minutes on the first side and 1-2 minutes on the second side.
- Remove the cooked fillets to a paper towel lined plate.
- (Add additional olive oil to the pan if necessary when you cook the remaining 2 fillets).
- Slice the lemon into wedges and serve with tilapia.
