Carrots - Cheese Scalloped
- 6 medium carrots, cut into slices or 2 (15 ounce) canssliced carrots
- 6 tablespoons butter or 6 tablespoons margarine
- 12 small onion, chopped
- 2 tablespoons flour
- 12 teaspoon salt
- 18 teaspoon pepper
- 18 teaspoon celery seed
- 18 teaspoon dry mustard
- 18 teaspoon dried basil
- 18 teaspoon ground thyme
- 1 cup milk
- 14 lb Velveeta cheese, cubed
- 1 12 cups dry breadcrumbs
- 2 tablespoons butter or 2 tablespoons margarine, melted

- Preheat oven to 350°F.

- Cook the sliced carrots until tender, then drain.
- 3.
- In a small pan, melt butter and saute onion until it is clear.
- 4.
- Add the flour, salt, pepper, celery seed, dry mustard, basil, and thyme and stir while gradually adding the milk.

- Cook until it is slightly thickened.
- 6.
- Add the cubed cheese, and cook until it is just melted.
- 7.
- In a 2-qt casserole dish, put the cooked carrots, and cover with the cheese mixture.
- 8.
- Melt the 2 tbsp butter and pour over breadcrumbs in a small bowl and stir until combined.
- 9.
- Sprinkle buttered breadcrumbs over the top of the cheese mixture, and bake for 25 min or until browned on top.
