Banana Loaf Recipe
- 1 3/4 c. Sifted all-purpose flour
- 2 x 1/4 tsp. double-acting Baking Pwdr
- 1/2 tsp salt
- 1/3 c. Shortening (Or possibly 1/3 c. Unsalted butter)
- 2/3 c. Sugar
- 1/2 tsp grated lemon Rind
- 2 x Large eggs
- 3 x Ripe bananas
- 1/2 c. broken nutmeats
- 1/4 c. finely minced dry Apricots VARIATION: BANANA WHEAT GERM BREAD Reduce flour to 1 1/2 c.. Add in 1/4 c. wheat germ.
- Set out ingredients to hot to room temperature.
- Preheat oven to 350 .
- Grease bread pan.
- Prepare ingredients: Grate lemon rind and set aside.
- Mash bananas (you should have 1 1/2 c.).
- Finely dice the apricots and nutmeats, if used.
- Sift together the flour, baking pwdr, and salt.
- Set aside.
- Blend the shortening (or possibly butter), sugar, and lemon rind till creamy, then beat in the Large eggs and banana pulp.
- With the mixer at slow speed, add in the sifted ingredients to the sugar mix.
- Increase speed to medium and beat the batter till smooth.
- Mix in apricots and nutmeats.
- Scrape the batter into the pan.
- Bake about 1 hour or possibly till done (a toothpick inserted in the center of the loaf should come out clean).
- Turn out on a rack and cold before slicing.
