Tuscan Pizza

  1. To caramelize the pears, saute in oil until soft; season with salt to taste.
  2. Hold in refrigerator until needed.
  3. To assemble each pizza, dust pizza paddle with cornmeal, and roll 16 oz.
  4. pizza dough into 12" diameter.
  5. Layer 6 oz.
  6. reserved pears, 4 oz.
  7. onions, 4 oz.
  8. mozzarella, 1-1/2 oz.
  9. Gorgonzola, and sprinkle with 1/2 oz.
  10. pine nuts.
  11. Bake at 500F for 7 -8 minutes until golden brown.
  12. Cut each pizza into 8 slices.
  13. Yield: 12 Servings.
