Turkey Meatloaf

  1. Spray a large saute pan with Pam.
  2. On medium high heat, add onions and saute until transparent.
  3. Add mushrooms, garlic, italian seasonings, tabasco sauce and 3/4 jar Pasta sauce.
  4. Lower heat to medium low and simmer for about 5 minutes, stirring occasionally.
  5. Add tomato paste and stir well.
  6. Simmer for another 5 minutes.
  7. Meanwhile, preheat oven to 425 degrees (225 C.).
  8. Spray large rectangular Pyrex dish with Pam.
  9. In very large bowl, add ground turkey.
  10. Add onion-mushroom mixture to ground turkey and combine well with wooden spoon.
  11. When mixture is combined, add about 1/2 cup (125 ml) of the bread crumbs and stir well.
  12. Keep adding bread crumbs until mixture holds together but isn't dry.
  13. Make sure the crumbs are mixed into the mixture well before adding the next amount.
  14. Mixture should hold together when you press the back of the spoon against it.
  15. You may need more than 1 cup (225 ml) of the crumbs.
  16. Place mixture in pyrex pan and form into a loaf shape.
  17. Bake at 425 degrees (225 C.) for one hour.
  18. When the hour is up, pour the remaining pasta sauce on top and spread over the entire area.
  19. Bake for another 30 to 45 minutes.
  20. Remove from oven and let stand for about 5 minutes to set.
  21. Leftovers are great in sandwiches or even cold.
