Fourth of July Cider Braised Leeks and Apples with Cheddar Dogs
- 2 tablespoons olive oil or butter
- 2 1/2 cups leeks thinly sliced, white and pale green parts
- 1 each apples any kind, peeled, cored and diced
- 1/2 teaspoon caraway seeds
- 1 pinch allspice ground
- 1 x salt to taste
- 1 1/4 cups apple cider or 1/4 cup bourbon
- 6 each hot dogs and hot dog buns grilled
- 1 x dijon mustard as needed
- 1/2 cup cheddar cheese shredded, about 2 ounces
- Add olive oil or butter in large skillet over medium heat.
- Put leeks and apple.
- Cover and cook until tender, stirring occasionally, 8 to 10 minutes.
- Stir in caraway seeds and allspice, season with salt and pepper to taste.
- Add cider, bring to boil.
- Reduce heat to medium-low.
- Simmer, uncovered, until most of liquid is cooked away, 16 to 18 minutes.
- Arrange grilled buns on plates.
- Spread each with mustard as needed, then top with grilled hot dogs.
- Sprinkle dogs with cheese and top with leek mixture.
- Serve warm.
