Curry Chicken
- 1 lb Chicken (breast or tights)
- 1/2 Onion
- 4 tbsp Curry powder
- 1/2 cup Heavy whipping cream
- 2 tbsp Olive oil
- 1 cup Chicken or vegetable broth
- 1/2 cup Potato flakes
- 1 Salt
- 1 Pepper
- Chop the onion and season the chicken
- Saute the onion with the olive oil
- Add the chicken and brown it for about 10 min each side
- Add the curry powder
- Add the broth (or the same amount of tomato sauce if you want an extra flavor) and cook it for about 15/20 minutes, or until the chicken is well cooked.
- Add the heavy whipping cream.
- You may add potato flakes to thicken the sauce if necessary.
- Serve with rice :)
- I recently tried a variation of this recipe using coconut milk, and it tastes wonderful!
