Quick Poached Salmon

  1. The method couldn't be easier: Simply place salmon fillets in 8- by 8-inch glass baking dish; sprinkle with 1/4 teaspoon salt.
  2. Add 1/4 cup water to dish.
  3. Cover and cook in microwave on High 8 minutes or until fish just turns opaque throughout and flakes easily when tested with a fork.
  4. With slotted wide metal spatula, remove salmon from baking dish and drain over paper towels.
  5. Place salmon on platter; keep warm.
