Quick Poached Salmon
- 4 piece center-cut salmon fillets
- 1/4 tsp. salt
- The method couldn't be easier: Simply place salmon fillets in 8- by 8-inch glass baking dish; sprinkle with 1/4 teaspoon salt.
- Add 1/4 cup water to dish.
- Cover and cook in microwave on High 8 minutes or until fish just turns opaque throughout and flakes easily when tested with a fork.
- With slotted wide metal spatula, remove salmon from baking dish and drain over paper towels.
- Place salmon on platter; keep warm.
