Cheesy Potato and Egg Casserole

  1. Saute onions in butter.
  2. Blend in flour and cook at medium heat.
  3. Stir in sour cream, cheese, parsley, salt and pepper.
  4. Layer potato slices in tarts.
  5. Spread 1/2 the sour cream mixture over potatoes.
  6. Layer tomato slices and egg slices in crust.
  7. Layer the rest of the potatoes and sour cream mixture on top.
  8. Sprinkle with bread crumbs and bake for 40 to 45 minutes at 350F (180C).
  9. Before serving decorate with tomato and egg wedges.
